The same matcha. One year later.

This is our 2025 harvest Premium Matcha – the same Okumidori, the same farm, the same stone-milled precision you already know.

But this one was never rushed.

While our regular Premium Matcha rested for six months before milling, this batch was left for a full year. What emerges is something quieter, rounder, and more complex. The sharpness softens. The umami deepens. The sweetness lingers longer in the bowl.

Until now, this matcha has only ever been served at our Matcha Masterclasses in Paris, Angers, and Milan. Today, for the first time, it is available to purchase – in extremely limited quantities.

What makes this matcha.

Grown by the Nakai family in Wazuka, Kyoto – organic farmers for over 350 years. Single-cultivar Okumidori, shade-grown under traditional tana shading, harvested in May 2025 and matured for one full year. Stone-milled slowly at just 30 to 40g per hour to preserve every note of aroma, fineness, and clarity.

A few dozen units only. Once sold out, the next one-year aged release will be the 2026 harvest – not available until around May 2027.

Preparation

For a pure bowl: 1.5–2g, 70ml hot water at 70–80°C.

Storage: Keep in a cool, dry place. Consume promptly after opening.

This is a refill-only release, delivered in a resealable pouch. For those who already have their tin, or who want to experience something different alongside their regular matcha.

Is this organic? Yes. JAS-certified organic, grown without pesticides or synthetic fertilizers.

Is it suitable for beginners? Completely. Its natural sweetness and smooth finish make it ideal for discovering what high-quality matcha actually tastes like - for the first time, or the hundredth.

Where is it produced? Wazuka, Kyoto, one of Japan's most respected regions for shaded tencha cultivation, and home to the Nakai family farm for over 350 years.
