For one year, this matcha was only ever served at our Matcha Masterclasses in Paris, Angers, and Milan. Today, for the first time, it is available to purchase in extremely limited quantities. The next one-year aged release won’t arrive until the 2026 harvest matures, around May 2027.

Our regular Premium Matcha already rests for six months before milling, long enough to round out most matcha. This batch was left for twice that long. Most producers never wait this long, because most matcha can’t afford to.

Grown by a family farm in Wazuka, Kyoto – organic farmers for over 350 years. Single-cultivar Okumidori, shade-grown under traditional shading, harvested in May 2025 and matured for one full year. Stone-milled slowly at just 30 to 40g per hour, to preserve every note of aroma, fineness, and clarity.

Nothing blended. Nothing hidden. Fully traceable to the field.

What a year of rest does to matcha: the sharpness softens, the umami deepens, the sweetness lingers longer in the bowl. Quieter, rounder, more complex, the same leaf, one year later.

This is a refill-only release, delivered in a resealable pouch for those who already have their tin, or who want to taste something different alongside their regular matcha. Once this batch is gone, the next won’t arrive until 2027.

Where is it produced? Wazuka, Kyoto, one of Japan's most respected regions for shaded tencha cultivation, and home to our partner family farm for over 350 years.

Preparation : for a pure bowl (usucha) 1.5–2g, 70ml hot water at 70–80°C.

Storage: Keep in a cool, dry place. Consume promptly after opening.
